Omnipollo was founded in Stockholm by brewer Henok Fentie and artist Karl Grandin in 2010. Originally a “gypsy brewery” who rented space in other breweries, but they finally built their own brewery in an old church in Stockholm in 2020. This is a collaboration with Fidens Brewing, WeldWerks Brewing, Root + Branch Brewing, Equilibrium Brewery, Green Cheek Beer Company and Vitamin Sea Brewing, with the name of the beer coming from them working with 3 breweries they’ve worked with before and 3 they’ve never worked with. Omnipollo have produced amazing beers consistently for the past 14 years, and I knew this would be no exception.
This had a cloudy lemon hue with a thin head that hung around for a long time. The aroma was fragrant and pleasant, with a lemon note that dominated with a clementine base supporting it. It was not as powerful as I thought it would be, considering this is a TIPA at over 10%. Upon swallowing, it felt sweet on the palate, with honey, pineapple, grapefruit and lemon in the forefront along some resin and grass hops backing those up. The body was thick and copious, and made this beer perfect for sipping. Although the alcohol was rather high, it did not impede the beer and was supported well by the heavy depth of flavour and body.
This was an exceptional beer, with the big body balancing the alcohol and hops well. It would be easy to drink this and not realize just how high the alcohol is, so could be considered dangerous in that way! If you don’t mind the price, this is a great beer and if you get the chance pick one up.
